Zoodles are zucchini noodles made using a spiralizer. This recipe is for a Dairy-Free Creamy Zucchini Noodle Pasta made with sausage. It’s a 4-ingredient meal, so it’s perfect for busy days.
Guys, I finally got a spiralizer!!! Actually, I should say, I finally got a decent spiralizer. The one I had before was a pain to use and clean, so when a fancy kitchen store opened up in my community, I jumped on their opening sale and got this foldable one because I have absolutely not one extra inch of space for more kitchen tools.
Spiralizing now takes only a few minutes. I used pre-cooked sausages in this recipe, so just chopped them into bite-sized pieces:
The only other ingredients are chopped green onions and tahini out of the jar (you can buy a raw version from Amazon or an organic roasted version from TJ’s). Honestly, this dish will take you no more than 15 minutes from start to finish. Once you have your ingredients ready to go, just heat up a big skillet.
Add the sausages to the skillet, then the noodles and onions, and then stir in the tahini and a bit of water to thin out the sauce:
Most sausages will have enough sodium that you don’t even need extra seasonings or salt. My fave brand of grass-fed beef sausage is called Teton Waters and I find it at Costco, (the store, not online).
Spiralizing is such a neat way to prepare veggies. I’m kind of interested in trying sweet potato noodles (swoodles?). Leave me your suggestions in the comments.

Creamy Zoodles with Sausage (Dairy-Free)

- 2 medium zucchini
- 2 green onions
- 2 cooked grass-fed beef sausages, or your favorite kind of cooked sausage
- 2 tablespoons tahini
- 2 tablespoons, water
- Spiralize the zucchini and dice the green onions. Set aside.
- Slice the sausages into bite-sized pieces.
- Heat a large non-stick skillet over medium heat.
- Add the sausages and cook for 1-2 minutes, or until they begin to brown.
- Add the zucchini, onions, tahini, and water, and stir to combine.
- Cook for another 4 minutes or until the zucchini has softened.
- Stir one last time and serve hot.
See, I wasn’t kidding. This recipe is so easy, I almost didn’t post it!
