How to make nut butter energy balls.

Step One

Line a baking sheet with parchment paper and set aside.

Step Two

In a medium bowl, combine all the ingredients. Use a spatula to mix the ingredients together really well.

Step Three

Roll the mixture into 12 balls about 1 1/2 inches in diameter.

Step Four

Lay each cookie onto a baking sheet and refrigerate for 15 minutes.

Can I use honey instead of maple syrup?

Yep! Honey will be just fine but do use maple syrup if you want them to be vegan friendly.

Can I use peanut butter or another nut butter?

Yes you can substitute your favorite nut butter in place of almond butter. If the mixture seems too sticky, simply add extra oats a little bit at a time until the desired consistency is reached.

Ingredients

  • 1 cup almond butter, at room temperature
  • ½ rolled oats (use gluten-free, if necessary)
  • ½ cup shredded, unsweetened coconut
  • 1 tablespoon cocoa powder or cacao powder
  • ¼ cup maple syrup
  • 1/3 cup chocolate chips (use vegan chocolate chips for dairy-free and vegan diets)

Instructions

  1. Line a baking sheet or plate with parchment paper and set aside.
  2. In a medium mixing bowl, combine the almond butter, oats, coconut, cocoa powder, maple syrup, and chocolate chips.
  3. Use a spatula to mix the ingredients well.
  4. Then, use your hands to roll the mixture into about 12 balls, each about 1 1/2-inches in diameter.
  5. Lay each cookie ball onto the baking sheet or plate, and then refrigerate the balls for about 15 minutes to help them stick together.
