Coco Chop Fruit Salad

This post is to share a super simple healthy recipe with you in honor of the one-year birthday of my recipe app, Vegan Delish!

Talk about a learning experience, there have been all kinds of challenges from when this project started with an idea in April of 2012 to when it was released in November, 2012. The development of the app coincided with an especially difficult time for me personally, as I was diagnosed and treated for thyroid cancer only about six weeks before its launch. In many ways, the project was a blessing, though, because it kept me focused on staying positive and getting better during all of the craziness of that time.

Other less stressful but still dramatic events included the process of starting a business with all the legal and financial ramifications that go along with that, working out the occasional software bugs, and keeping up with all of the technical changes for the iOS7 launch.

In light of all that, it pleases me to no end how Vegan Delish has been wholly embraced by users: thank you!!! It is a product of my varied background and interest in public health and business, as well as a manifestation of my life’s purpose to live a healthy, compassionate life and to inspire others to do the same. Since its release, Vegan Delish has held its position in the top 50 paid Food & Drink apps in the App Store nearly every week and has grown from having 50 of my favorite recipes to over 140 (with more added each month).

The most exciting development has been the inclusion of recipes from other bloggers that are hand-selected for ease of preparation, simple ingredients, and overall healthfulness. A very special thank you to the Vegan Delish Featured Contributors for sharing their wonderful creations:

Okay, seriously, I didn’t mean this to be a sales pitch, but Vegan Delish is my baby and I am a proud mama. I have some cool stuff planned for the future, too. I will keep adding new recipes, but I’m also working on improving the website for the app and researching the possibility of developing an Android version.

But, before I get ahead of myself, I do want to share this delicious fruit salad recipe I made last week using a secret ingredient: jicama! I thought since we are getting near the holidays where luscious, decadent desserts reign supreme, it might be nice to have an easy, less rich dessert option.

Do you know what jicama looks like? It is a hideous thing:

But once you peel off the skin and chop it up, its creamy white flesh hides beautifully in the fruit salad:

I used some characteristic fruits of fall for the salad including persimmons, apples, and pears, with some sweet additions like mandarin oranges and kiwi. The jicama adds bulk, unsweetened dried coconut adds richness, and a splash of fresh lime juice pumps up the flavor.

What better way to celebrate a birthday than with a healthy treat?

Ingredients
  • 2 mandarin oranges
  • 2 sweet red apples like Fuji or Honeycrisp
  • 2 Fuyu persimmons
  • 1 pear
  • 3 kiwi fruit
  • 1 medium jicama
  • 1 small lime
  • 3 tablespoons unsweetened shredded coconut
Instructions
  1. Peel the mandarin oranges and divide into segments, placing them into a medium-sized mixing bowl.
  2. Chop the apple, persimmons, and pear into bite-sized pieces and add to the bowl.
  3. Carefully cut away the peel from the kiwi and slice the fruit. Add to the bowl and use a large spoon to combine the fruit.
  4. Rinse any dirt of the jicama and use a vegetable peeler to peel off the skin. Chop the jicama into bite-sized chunks.
  5. Juice the lime and pour the juice over the fruit. Sprinkle the coconut on top and stir well to combine.

Lastly, before I bore you too much, I wanted to leave you with a sincere request to those who have downloaded the app and that is to leave a positive review on the App Store. Even if you have done this in the past, Apple will let you re-post your review with each update. To do so, you go into the App Store and search for Vegan Delish. Click on “Open” and then hit “Write a Review” on the next screen:

    The fruit salad looks lovely and fresh, though jicama sadly isn’t the easiest to find in these parts.

      Hi Suzanne! Darn, I wish I could send you some jicama, they are really good. I think they are native to Mexico, but I’m not sure. You must get your hands on a persimmon, though. The Fuyu variety is crisp like an apple, but much sweeter. I luuuuurve them! :)

      Hi Kristin! I am just at the beginning stages of research an Android version of Vegan Delish. Question: have you bought any other apps and what type of price range would you be willing to pay for a recipe app? Thanks for your interest and I hope I can make this happen! :)

        That’s great! I only have a few vegan/recipe apps on my phone: All Gone Vegan, a recipe app (I think I paid $1, but it isn’t a good app), Animal-Free, Cruelty-Free, Vegan Peace, and PETA were all free. I do have a few personal training apps such as Personal Running Trainer and You Are Your Own Gym that I’ve paid a few dollars for each. I’m not sure what the cost of the Vegan Delish app is on the iPhone, but I’m sure us Android users would be willing to pay the same amount!

    First of all congratulations on the birthday of your app! I for one love it and I will make a note to go do a review!

    What a clever recipe name – and I never thought to add jicama to a fruit salad – love that it adds crunch and volume. I will have to try that. I sometimes I set up a fruit salad sundae bar – it consists of a big bowl of fruit salad and then vanilla soy yogurt and a variety of toppings that include, coconut, nuts, chocolate chips, granola, dried fruit, pomegranate perils, crunchy dry cereal flakes, ground flax seeds, chia seeds and anything else I find in the pantry. It’s a big hit with everyone and so healthy!

Just a note because some people are confused, the review that is most important is the one on the App Store, not the one on the app for individual recipes, if that makes any sense.
