Healthy Vegan Friday #68 – Warm Flavors of Fall

Healthy Vegan Friday Warm Flavors of Fall

Happy Healthy Vegan Friday! This is a weekly round-up of the best whole food, plant-based recipes from around the blogosphere. Today’s 68th(!) edition is filled with the warm flavors of fall including pumpkin, gingerbread, cinnamon, chocolate, and vanilla. With the shorter days, I’m all about snuggling in with these delicious spices, so let’s get right to the recipes.

Rouxbe Online Culinary School Giveaway Winner:

I’m pleased as punch that there was so much interest in my giveaway for a year’s worth of access to Rouxbe, the online culinary school with a plant-based track. There were 968 entries which makes it my most popular giveaway yet. The winner was selected randomly and was…drum roll, please…Dianne H. (entry #68) who answered the question “What’s your healthy cooking tip?” with “cook without oil.” I agree, Dianne, that’s one of my favorite healthy tips as well (I use water or veggie broth instead of oil).

Dianne will get a year’s worth of access to Rouxbe so maybe we will be able to call her Chef Dianne next year? For everyone else who wants to improve his or her cooking skills, you can always sign up for a free 7-day trial using this link (note: I have no association with Rouxbe other than I was given a 60-day trial to test it out).

Conclusion:

Well, just like that we’re into the busy upcoming holiday season. I’m not a big holiday celebrator, but I have quite a few exciting projects on my plate including finishing my master’s degree in public health (6 more weeks(!!!), not that I’m counting), the upcoming Virtual Vegan Potluck on November 16th, my 10-year reunion from my first master’s degree, temporarily re-locating to Southern California for two months, figuring out what to do with my life (ha), continuing to work on Vegan Delish to make it the best recipe app on the planet (gotta beat those annoying junk food and Paleo apps!), and just generally keeping up with life.

What’s new with you and what are you working on right now? Tell me, I want to know.

I have a special celebration and recipe to share with you on Monday. Until then, have a healthy, happy weekend.

Thanks for sharing your recipe, Shannon! I was surprised and intrigued by it, I never, ever would have thought about using beans to make a non-dairy milk. :)

So many delicious recipes every week! Sounds like life is really busy for you right now – so close to graduation! My son will graduate from College in December!

I do think your app is the best food app out there!

Congrats to your son, Tami, and to you as I’m sure you’ve been a big part of his college career. Thanks for the kind words on Vegan Delish. Have a great weekend! :)

Carrie, thank you for featuring my Pumpkin Spice and Everything Nice Green Smoothie! I absolutely love participating in Healthy Vegan Fridays and am honored to have been featured! It sounds like you have a lot of awesome things happening over the next couple months. Congratulations on almost being done with your MPH and good luck on the home stretch! I just graduated from my MPH program in June, so I know it is a busy time. You will rock it! XOXO

Hi Alexandra! Thanks for the note. I’m guilty of having a major case of senioritis right now and doing everything I can to avoid those last few papers and projects I have to write. Ugh!!! Anyway, I do see the light at the end of the tunnel and I’m enjoying putting my public health education to work with my blog and writings. I’d live to connect with you at some point to talk about our experiences, I think we probably have tons in common. Since you’re in the LA area, do you ever get to Palm Springs? I’ll be there from late Nov thru late Jan and would love to try and meet up sometime. I also get to Pasadena fairly often. Have a great weekend!

Hi Carrie! Thanks for your sweet response. I would love to connect as well! When you get a moment (I know you’re so busy right now!), send me an email with the dates of your time in SoCal. Unfortunately, my husband and I are moving to New Jersey in mid December, although the good news is that we’re moving for my new job and to be closer to his family. Maybe we could meet up before I leave? I’ll be emailing you tomorrow with the winners of the app, so we can connect more through email.
