Happy Healthy Vegan Friday! This is a weekly round-up of the best whole food, plant-based recipes from around the blogosphere. Today’s 68th(!) edition is filled with the warm flavors of fall including pumpkin, gingerbread, cinnamon, chocolate, and vanilla. With the shorter days, I’m all about snuggling in with these delicious spices, so let’s get right to the recipes.
Reader Favorites (as based on the number of clicks):
My favorites (I pick recipes that use minimal oil, salt, or added sugars). There were so many great ones this week that I picked the top 4 instead of 3:
1. Best Cold Weather Breakfast – Apple Cinnamon Hot Breakfast Cereal from In Fine Balance:
2. Best Fall-Flavored Smoothie – Pumpkin Spice and Everything Nice Green Smoothie from Made to Glow:
3. Most Creative Use of Pumpkin – Pumpkin-Infused Refried Beans from The Taste Space:
4. Best Fall Muffins (see the recipe for the secret yummy center) – Gingerbread Muffins from Sometimes I Miss the Sky:
Honorable Mentions (again, I pick recipes that use minimal oil, salt, and added sugars):
Wow, I am so inspired by the creativity and all around fabulousness of this week’s offerings. Remember to include the link to your whole food, plant-based recipe at the end of this post (just scroll past the thumbnails and you’ll see where to add yours). Questions? Rouxbe Online Culinary School Giveaway Winner:
I’m pleased as punch that there was so much interest in my giveaway for a year’s worth of access to Rouxbe, the online culinary school with a plant-based track. There were 968 entries which makes it my most popular giveaway yet. The winner was selected randomly and was…drum roll, please…Dianne H. (entry #68) who answered the question “What’s your healthy cooking tip?” with “cook without oil.” I agree, Dianne, that’s one of my favorite healthy tips as well (I use water or veggie broth instead of oil).
Dianne will get a year’s worth of access to Rouxbe so maybe we will be able to call her Chef Dianne next year? For everyone else who wants to improve his or her cooking skills, you can always sign up for a free 7-day trial using this link (note: I have no association with Rouxbe other than I was given a 60-day trial to test it out).
Well, just like that we’re into the busy upcoming holiday season. I’m not a big holiday celebrator, but I have quite a few exciting projects on my plate including finishing my master’s degree in public health (6 more weeks(!!!), not that I’m counting), the upcoming Virtual Vegan Potluck on November 16th, my 10-year reunion from my first master’s degree, temporarily re-locating to Southern California for two months, figuring out what to do with my life (ha), continuing to work on Vegan Delish to make it the best recipe app on the planet (gotta beat those annoying junk food and Paleo apps!), and just generally keeping up with life.
What’s new with you and what are you working on right now? Tell me, I want to know.
I have a special celebration and recipe to share with you on Monday. Until then, have a healthy, happy weekend.
And, if you have an iPhone or iPad, be sure to download my recipe app, Vegan Delish, featuring over 140 healthy, whole food recipes.
