Welcome to Healthy Vegan Friday, the weekly link-up party for whole food, plant-based recipes. This week the submissions seemed to be all about summer fruits and vegetables and some of the indulgences of these long, warm days. I know we’ve had a late-ish summer here in California and I had my first watermelon only a few weeks ago.

It’s been a busy and quick week with the Labor Day holiday on Monday. My class started on Tuesday and it’s going pretty well so far; it’s called Nutritional Problems in the U.S. which of course is a very interesting topic. I was happy to discover that one of my vegan doctor friends is in the class so it’s nice to have her there to lend plant-powered support in our discussions.
I hope you have a great weekend. I’m catching up with some friends but also trying to get ahead in my work because I’m going to Seattle late next week to visit my sister. See you back here on Monday.
