Welcome to Healthy Vegan Friday, the weekly round-up of the best plant-based recipes from the blogosphere.

The link-up event is co-hosted by Katherine at Green Thickies (all the way from Scotland) and Gabby from The Veggie Nook (in Canada), and me, hailing from California. You can read the submission guidelines for Healthy Vegan Fridays here, plus see a list of the last 50+ weeks of recipes, too.

Healthy Vegan Challenge:

Healthy Vegan Challenge Fall 2013

If you’ve been reading my blog for awhile, you know I also host an event called the Healthy Vegan Challenge. The event runs in 6-week increments and it’s a way for you to set goals and find support. While you don’t have to be vegan to join, it is encouraged that you try moving in that direction during the Challenge. Your goals don’t even have to be food-related, I set a goal of meditating for 10 minutes a day during a previous go-around.

As you can see from the photo, the next Challenge starts Monday, August 26th, and will run through October 6th. I don’t tend to write much about it on my blog, but the real support happens in the Facebook group. You can join here.

Rip Esselstyn’s New Book:

I wrote a review of Rip Esselsyn’s new book, My Beef With Meat: The Healthiest Argument for Eating a Plant-Strong Diet. My review was published yesterday on the Our Hen House website, you can read it here. Besides having a semi-crush on Rip ‘cuz he’s a big, strong, vegan man, I really like his style of writing and approachability. If you are trying to convince any big, strong men in your life to consider changing their eating habits, this book might be the ticket.

In addition to the engaging commentary, there are some fantastic recipes in this book. Head on over to my review and you’ll be treated to recipes for Kale Butter (not to be missed, it’s my new favorite kale recipe since kale chips) and a Mango-Cherry Ice Cream. Again, the link to my review is here.

Conclusion:

I hope you have a happy, healthy weekend. I’m grasping onto the last days of summer and made plans for tomorrow with friends to tour a local lighthouse and be outside as much as possible. I’ll be back here on Tuesday with a brand-new post and I also plan to add some delicious new recipes to Vegan Delish, my recipe app for iPhones and iPads this weekend.

Until then, feel free to connect with me on FacebookTwitterPinterestInstagram, or Google+ and please download Vegan Delish on the iTunes store here.

I love the new E2 book and my daughter and I have made many of the recipes out of it. All have been delicious and two thumbs up with the family!

The light house tour sounds like fun. We have been to a few ourselves and they are charming! Have a great weekend Carrie!

These all look yummy. I’m particularly excited about the mint chocolate avocado fudge! I will definitely be making that one soon. I just started my blog and hope to get it in on the next Healthy Vegan Fridays. Cheers!
