Vida Vegan Con:

In the meantime, I’ve been all around town enjoying the vegan yumminess that Portland has to offer. I got things started off right yesterday morning with a yoga class at Yoga Pearl, a green juice at Prasad, and then an amazing feast at Blossoming Lotus including the Masala Bowl that had tons of steamed kale and chickpeas in a coconut sauce and then a wildly indulgent slice of German Chocolate Cake:

Kale balances out sugar and chocolate, right? Yeah, okay, maybe not. :)

Thursday festivities also included a “meet and greet” at a cool bar where I got to meet some new and old friends and then a trip to the infamous vegan mini-mall where I picked up some goodies including this t-shirt, a sticker “Veganism is for lovers,” and some soy curls (I have never eaten these, but decided to get all crazy and buy some):

Healthy Taste of Los Angeles:

As I experience everything that this blogging conference has to offer in Portland, I also wanted to remind you of an event happening on June 23rd in Los Angeles. It’s called The Healthy Taste of LA and it’s going to be fabulous. There will be several very influential speakers from the healthy plant-based movement, along with a catered lunch.     I love soy curls! I don’t buy them too often but my omnivore husband likes them too, and I do what I can to get him to eat vegan meals! I like to add them to jambalaya in place of the meat and I also have a Chipotle Chickin Mac n Cheeze recipe of my own that uses them. It’s my ultimate vegan comfort food and it’s really not bad for you! No oil, nothing fried.     I’m heading to Portland on Sunday. Will definitely have to go to Blossoming Lotus. I’ve been to Portland several times and never made it there. Thanks for the reminder!!

    I am the world’s WORST cake decorator, but my cakes cannot be beat in taste! This week I shared a recipe for chocolate ganache frosting, made with coconut oil and no refined sugars.     So many great ideas in the linky. I want to try them all.
    I was glad to see that my detox drink from last week was so popular. It’s so easy and so beneficial. This week I linked a simple recipe for roasted baby zucchini ( I bought mine at Trader Joe’s) in fresh herbs.. They are tender, flavorful, and succulent. Thanks for hosting.
