Vegan Kale Parmesan Recipe & Mountain Rose Giveaway

Happy Wednesday to you, I hope you are having a great week so far!

Today, I am posting a picture of everything I ate yesterday. I started off with some green smoothie, this one had a whole bunch of baby greens that really needed to be used up, plus a bunch of other goodies including mango, strawberries, flax, chia, hemp milk, and my superfood additions:

I had my appointment with my surgeon yesterday to have some laser work done on my scar to hopefully stop the keloid from getting worse. It ended up hurting a lot less than I thought, especially because we skipped the cortisone injections (phew). I’ll need a few more laser treatments, but I think it already looks less red today which is a good sign.

Lunch was another round of my Vegan Sushi Rolls, with a little salad of chopped bell pepper topped with some Pesto Hemp Dressing:

I had an apple and walnuts for dessert:

Dinner was something special as I steamed kale, topped it with my Saffron “Cheese” Sauce, and mixed it all up with some shirataki noodles.

Do you know about these noodles? How come I have never discovered them before?!? There are several types, but the version I used is tofu-based, I found them at my health food store:

Oh my goodness, this is my new favorite food! They taste very bland by themselves, but mixed up with veggies and a flavorful sauce, they have great texture and taste equally as good as regular wheat-based pasta to me.

So, back to what I was saying, I made dinner by first steaming the kale, squeezing it dry, chopping it, and then adding the “cheese” sauce:

I then boiled the noodles to warm them up, drained them, and added them to the kale and sauce:

Topped with more nutritional yeast, this was an amazing, healthy dinner that I’m calling Kale Parmesan (I will make this recipe available on my app, Vegan Delish, today or tomorrow):

Alan asked if I could make it with just the noodles and the sauce, until I reminded him that, no, duh, the kale is what makes it healthy. That’s what he gets for living with me. :)

Dessert was a leftover roasted sweet potato with a little bit of coconut cream on top:

Mountain Rose Giveaway:

So over the past year or so, I’ve been adding more and more superfoods to my diet, based on what I learn from Dr. Greger’s videos on NutritionFacts.org.

My search for amla powder based on the information in these videos is what initially led me to Mountain Rose Herbs, an environmentally-friendly company based in Oregon selling organic herbs, spices, and other products that support a healthy lifestyle. Since then, I’ve purchased many, many different products from Mountain Rose and finally decided to join their affiliate program about a week ago based on all of the referrals I make for them.

Lastly, the third product that I adore and that will be part of the giveaway package is the Aphrodite Aroma Spray that I now use as my primary fragrance based on this scary article I read about the nasty stuff contained in traditional perfumes. I took a chance on buying the Aphrodite Spray without having smelled it first-hand, but I was overjoyed when I got it and absolutely fell in love with the scent. If you’re ever been in an Aveda store, then it is reminiscent of that fragrance. I use it as a body spray, but you can also use it as a room spray if you want:

    Well, I was so impressed by the Dandy Blend you recommended, I now want to try the Herbal Coffee that Mountain Rose offers! I was one of those 4 to 6 cup a day coffee drinkers before your Healthy Vegan Challenge…I’m down to a morning cup of coffee (with an occasional after-lunch cup)…not perfect, but much better! So another alternative might just do the trick!

    All of the products sounds amazing! I think the one that caught my eye is the herbal coffee. I have never tried herbal coffee and I gave up coffee three years ago. That would be a great alternative.

        Lol, yes very dangerous!!!! It’s an herb that has many functions including enhancing immune system and central nervous system function. Mountain Rose Herbs is a recommended source so I am reassured to see you’ve had success with them for other products as well. :)

      Dandy Blend might be a good option for your husband, Kimmy. The herbal coffee from Mountain Rose is fantastic, too, but the Dandy Blend is probably more similar to a coffee flavor. This is coming from someone who never drank coffee, though. :)

    I use Miracle Noodles which are delicious, you have to look them up! I am all about the natural route! I have been doing a trial of the natural beauty products in stores and also making a few of my own!         Will do, Carrie. It’s my understanding that oat tops support the nervous system and are good for alleviating anxiety. This is just what I need right now as I work on my Master’s thesis, juggle two jobs, and balance other family/friend/volunteer responsibilities. But oat top tea tastes good too! Very soothing, like chamomile.

    I’ve tried many of their teas and have LOVED them! I would love to try just about any of their other products!

    I am also very interested in their Animal Healing Salve for Dogs – I have 3 dogs. One of them has chronic ear infections and I think this would work wonder – not for IN the ear but around the outside as well as a part of his ear where he has a bald spot from itching it.

    Definitely would want to try the Aroma Spray. I cut out all traditional sprays/perfumes/lotions about a year ago. I miss the scents but now when I smell them they seem really noxious (and obnoxious!). So I’m sure there’s yucky stuff in most of them – I didn’t check out your link yet but will.

      Also, Carrie, I’m real happy to hear the laser didn’t hurt as bad as you thought and that the scar already looks less red. Also, nice that you didn’t have to get the cortisone shot (sometimes i think cortisone shots hurt worse than the actual thing, you know). This is all good news! :)

    I was super excited about the sprays, since I’ve foregone all perfumes, but since I live in Canada I’ll have to find a more local source.
    I have heard nothing but great things about MRH and will definitely purchase from them in the future! I hadn’t heard of amla powder before and haven’t seen it anywhere else so I think it would be awesome to try that! (I make my own deodorant so I’ve also previously scoped out some awesome options for improving that!)

    I’d love to try that Herbal Coffee! I’m actually totally grain-free, so I can’t drink dandy blend, teeccino, or the other coffee alternatives that contain grains. I have to admit I have really missed coffee, and a drop of almond milk in herbal tea is just not quite cutting it lately. I actually tried to find Mountain Rose herbal coffee around the NYC area and have had no luck! Maybe this giveaway will be my ticket to a great morning brew. Fingers crossed!

      Hi Daphne, I don’t consume a lot of grains either, so you make a good point about finding another coffee alternative. The one from Mountain Rose is made with dandelion root, carob, and maca, and I loooooove it. :)

      Hi Judy! That is a good question about the amount of amla powder to use. When Dr. Greger first published these videos on amla, someone asked Dr. Fuhrman on his website about how much to use. He did put a caution out not to overuse it, because there isn’t research available on how much to use and any possible negative effects. I don’t remember if he gave an exact guideline, but I use about a 1/2 teaspoon a few times a week, and I vary my intake of superfoods, just to make sure I don’t get too much of one or the other. Does that help at all?
