Healthy Vegan Challenge Kick-Off & New Kale Recipe

Healthy Vegan Challenge:

Good morning! I am so excited that this day is here, the kick-off of our Spring 2013 Healthy Vegan Challenge!!! I feel like I am a big ball of energy, nervousness, and anticipation. I even lost some sleep last night because I was thinking about it. It makes sense that there is some stress involved, because it’s human nature to avoid change in many ways. If you are participating in the Challenge, then I hope you have a clear sense of your goals for the next eight weeks (that’s 56 days in case anyone is counting…ha!).

I listed my goals in this post and I put my little contract with myself front and center on my kitchen bulletin board:

Just as a reminder, the point of the Challenge is for you to create your own goals to move toward a healthier, vegan life; the benefit of doing it together is that we can support each other.

I’ll be writing about my progress on my blog and you can feel free to use the comments section to give or get feedback, but I also created a Facebook Group where we can support each other easier. The link to that group is here and you’ll see I’ve made it a “closed” group to increase privacy so you’ll need to request to join and then I’ll approve you.

After dinner last night, Alan and I made our final preparations for the Challenge by rounding up all of our “naughty” foods from the pantry:

We put them in a bag (ironically, from Whole Foods), taped it up and put a note reminding us to stay away until April 22nd. I set Dr. Fuhrman’s book in front as a shield. 🙂


I secretly hope that come the end of the Challenge, I can just put this bag in the trash or donate it to the Food Bank and not even bother opening it, but we’ll see.

New Recipe:

I made a new recipe late last week that I’m only getting around to sharing now. I started with these ingredients (kale, mushrooms, peas, beans, cooked sweet potato, onion and tahini sauce). I also used a tomato that didn’t get pictured:

    My goal is 100% compliance with Dr. Fuhrman’s 6-week plan. Three meals, and a snack allowed only if I ate a low-calorie meal and got hungry too soon as a result. Eating only when hungry and stopping when no longer hungry, even if I don’t feel “full” yet.

    I’m so excited to recommit and I’m even more excited your first recipe is a greens recipe. I have the hardest time getting my greens. I’m not a fan so far. I’ll keep trying to change my taste buds! I have everything to give this a go tonight!

    Hi Carrie!
    I am on board with this challenge! I know the address to where you purchased your non-fortified nutritional yeast is among one of your blogs, but could you please re-post it and thank you.

    Your saffron cheese sauce has become one of our favorites to put on veggies, it has helped me eat more of them. I do add a splash of Dr. Fuhrman’s reisling vinegar for an extra “twang”. 🙂

    Ugh… I woke up this morning not feeling so great – not a good way to start a challenge. I was over-indulgent this weekend with the challenge looming ahead – that will be part of my challenge (not to overindulge). I’m looking forward to looking & feeling great within a few short days!
    So glad you are hosting this challenge, it’s just what I needed =)
    The kale dish looks great – I can’t wait to try it out!

    So excited to be taking part in this challenge and getting back to lots of whole food vegan eats. I’ve been really under the weather of late with a viral infection so I’m hoping the good stuff on the nutritional front will clear it up! The kale dish sounds awesome, will have to try that!

    I have to say Carrie I have been so involved with being part of the group I even had a moment where I experienced that feeling of thinking I had dessert (you know what I mean, that euphoric anticipation when you know you have something delicious waiting for you) and then I realized I just had tea!!!!

    Can I start tomorrow? I forgot and want to jump on board. I am getting married May 18th, and my health and good habits have gone out the window. I need to focus on myself so I am healthy and happy for the big day. My main goals are to work out for 30 min daily, enjoy a daily green smoothie/salad and limit wine to one day a week. I can’t wait, thanks for doing this!!!!!!!

    Carrie! Thank you for turning me onto Dr. Furhman! I began your challenge today – and my goal is to follow the 6 week plan to the “t” and I also have one month left of a ChaLEAN Extreme challenge. My goal for is to finish ChaLEAN strong, walk 2 miles a day and meal plan on Sundays and try a new recipe every week. So far, yesterday I made Dr. Furhman’s Tofu Ranch Dressing for my enormous salad full of veggies, great northern beans and raw sunflower seeds! It wasn’t too bad. Thank you so much for motivating me and I look forward to following your journey!

    I’m thrilled to have found your blog! I picked up Eat To live a couple of months ago and have been strictly following it for 30 days now. I’m 40, learning an entirely new way of eating & cooking and so thankful for your recipes. I’ve already lost 12 lbs 🙂 and I have lots of energy. I’ve been journaling what I eat because I’ve been amazed that I’m not hungry and I do have a lot of weight to loose (around 40lbs). However, I’m curious if the folks who have been following ETL if they find it necessary to journal (weigh & measure their food) to loose excess weight?

    Well, thanks for the challenge. It’s great to have found the support of others making similar healthy choices. I have been cutting out; Salt, oil, refined sugar & flour, no sweeteners
