I first posted a recipe for a Chocolate Cherry Bomb Smoothie last October. It was around that time that I was discovering new frozen fruits at my local grocery store. Since then, I’ve been able to find organic frozen cherries (as opposed to non-organic) which is a good thing because cherries rank #16 on the Environmental Working Group’s list of fruits and vegetables with the most pesticides (you can see the full list here.)
So, I’ve completely re-worked the original recipe using homemade walnut milk and even adding two cups of frozen broccoli whose flavor or color cannot be detected at all. Healthy? Chocolate? Yes, please!
I started with 1/4 cup of unsalted, raw walnuts that I soaked overnight in water and rinsed thoroughly (this step is optional):
I blended the walnuts with two cups of water in my high-speed blender. It takes less than a minute to make homemade walnut milk. The Vitamix blends it from this:
To this creamy mixture:
I then used one cup of frozen cherries that I found at Albertson’s:
I also used two cups of frozen broccoli florets:
The other ingredients I added were one frozen banana, cacao powder, chia seeds, flax meal and dates.
Here’s my Vitamix all ready to go:
Blended on high a few minutes later:
I am so happy that broccoli didn’t turn the smoothie green whatsoever. This is the perfect smoothie for kids (or husbands) whom you might just not want to tell them that it’s healthy.
I topped it with the cacao nibs for a touch of crunch and more chocolate-y flavor:
Here’s the recipe:
- ¼ cup raw, unsalted walnuts (an optional extra step is to soak them in water overnight and rinse them well before using)
- 2 cups filtered water
- 1 cup frozen cherries (organic, if possible)
- 2 cups frozen broccoli florets
- 1 frozen banana
- 1 tablespoon cacao powder
- 1 teaspoon chia seeds
- 1 tablespoon flax meal
- 2 large dates, pitted
- splash of vanilla extract
- cacao nibs for topping (optional)
- Make homemade walnut milk by blending the walnuts and the water in a high-speed blender for one minute.
- Next, add frozen fruit and remaining ingredients and blend on high until smooth. Serve cold with cacao nibs sprinkled on top.
